Vampire Fudge

2-1/2 cups sifted powdered sugar
2/3 cup milk
1/4 cup butter
12 oz. White Chocolate baking squares, coarsely chopped (No substitute)
1/4 tsp. clear almond extract (Wilton’s)
3/4 cup dried tart red cherries, chopped or snipped
3/4 cup sliced almonds, chopped slightly and toasted

Line an 8x8-inch pan with lightly-buttered foil, then set aside. Butter sides of a heavy saucepan; add sugar, milk and 1/4 cup butter. Bring to a boil over medium-high heat, stirring constantly with a wooden spoon.
Once it’s at a rolling boil, reduce heat to a gentle boil and do not stir for 5 minutes. Reduce heat lower, then add white chocolate and stir until chocolate is completely melted. Remove pan from heat and stir in almond extract, dried cherries and almonds. Stir well to blend and quickly pour into the prepared pan.
Chill overnight. Cut into 1 inch squares.

EDWARD’S CORNFLAKE CHICKEN

Serves 8-10

Recipe from Love at First Bite, the Unofficial Twilight
Cookbook by Gina Meyers

10 drumsticks, washed
3 cups of cornflake cereal, crushed
¼ cup of vegetable oil
Salt and pepper to taste

Heat oven to 425 degrees F
Remove skin off of drumsticks and wash and dry chicken thoroughly and pat dry with paper towels
In a large baking dish, pour oil and dip and roll chicken in the oil. In a large plastic sealed type bag, place 3 cups of cornflake cereal, salt and pepper to taste and seal. Make sure all air is out of the bag, and crush cornflakes with a wooden spoon or a rolling pin
Next, take drumsticks one at a time and place in the crushed cornflakes, reseal plastic bag and shake until chicken is thoroughly coated with the crushed cornflakes
Place chicken drumsticks in an ungreased 8 x 11.5 baking dish and bake for forty five minutes, uncovered
